my oatmeal dream.

it’s no secret that i’m an oatmeal lover, so when Fit Approach partnered with My Oatmeal to let a few sweat pink ambassadors taste test custom oatmeal blends i was quick to jump on it.

and when i say custom, i really mean custom. there are over 22 billion different combinations you can make on their website.

i opted for a healthy oatmeal mix full of my favourite summer flavours, coconut and peach, and named this tropical treat peach coconut dream.


my ingredients were: steel cut whole oats, coconut cream pie flavour, chipped coconut and diced peaches with brown sugar cane for sweetness.

while you could cook the oatmeal on the stovetop or in the microwave, i decided to amp up the flavours of coconut and peach in a delicious warm baked treat.


peach coconut dream baked oatmeal
makes six servings

  • 2 cups peach coconut dream oats
  • 1 cup unsweetened coconut flakes
  • 1/4 cup light brown sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 cups vanilla almond milk
  • 1 egg
  • 3 tbsp coconut oil
  • 1 tsp vanilla extract
  • 1 1/2 cups frozen peaches, diced

preheat oven to 350 and grease a 8×8 baking dish.
in a medium bowl, mix together oats, coconut, brown sugar, baking powder and salt.
in another medium bowl, whisk together the milk, egg, coconut oil, and vanilla.
arrange two-thirds of the peaches on the bottom of the baking dish. pour oat mixture evenly over the peaches then pour the milk mixture over the oats.
gently shake the dish to make sure the milk covers the oats.
arrange the remaining peaches on top of oats.
bake for 40 minutes, until the top is golden and oatmeal is set.
cool for five minutes and serve warm.


since it’s just me, and the recipe makes six servings (four if you’re a hungry one) i’ve discovered that this recipe keeps really well. we’ve talked about my distaste for mornings, so it’s nice to be able to portion this recipe into individual containers for breakfast for the week and reheat in the microwave with a splash of almond milk.

blueberries or apple and cinnamon would also be amazing combinations.
