take me to the tropics.

i’m a tropical gal. sunshine and beaches and anything but this cold – hey, i love many things about being a canadian, but winter isn’t one of them (unless it is pretty snowing, and not too cold, and i don’t have to drive anywhere, and i have mittens, and a hot chocolate, and someone to hold hands with and play in the snow – so basically never).

this is one of the reasons i got so super excited about vega’s newest flavour of Vega One Nutritional Shake: coconut almond!

i’m pretty kookie for coconut to begin with, but when you open the tub it smells like the beach and sun tan lotion…but in a good way.

and then i missed the warm weather something fierce and knew that i had to recreate my favourite beach drink (piña colada!) in a healthier, breakfast-friendly way.

we’re keeping it a mocktail, but feel free to spice up your morning however you’d like.

green colada smoothie

green colada smoothie
serves two

  • 1 scoop vega one coconut almond nutritional shake
  • 1 cup coconut water
  • 1/2 cup light coconut milk
  • 1/2 cup frozen pineapple
  • 1 kale leaf
  • 1 tsp shredded coconut

put first five ingredients in a blender. blend until smooth and the kale has fully broken down. pour into a glass and top with shredded coconut.

i find the vega powder mixes really well in flavour if you let your smoothie sit for a few minutes. which is enough time to pull your lawn chair by the window to soak up some rays (thank goodness calgary is always so sunny!)
